Ingredients

Crust

Instructions

  1. Prepare the crust: Crush the chocolate cookies using a food processor or rolling pin until fine crumbs form. In a mixing bowl, combine the cookie crumbs, melted butter, sugar (if using), and salt, stirring until well mixed. Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie pan. Bake the crust at 350°F (175°C) for 10 minutes. Remove from oven and let it cool completely before adding the filling.
  2. Make the ganache: Heat the ¾ cup of heavy cream in a small saucepan just until it begins to simmer. Pour the hot cream over the chopped dark chocolate in a bowl. Add the vanilla extract and let it sit for a minute, then stir gently until smooth and glossy. Spread the ganache evenly over the cooled crust. Chill the crust and ganache layer in the refrigerator for 30 minutes to set.
