Instructions
Prepare the crust: In a medium bowl, mix the graham cracker crumbs, sugar, and cinnamon (if using). Add melted butter and stir until combined. Press into a tart pan or pie dish, refrigerate to chill.
- Make the chocolate ganache: Place dark chocolate in a heatproof bowl. Heat cream (or coconut cream) over medium heat until simmering, then pour over chocolate. Let sit for a few minutes to soften, stir until smooth. Add butter, vanilla, and salt, stir until glossy.
- Fill the tart: Pour the ganache into the chilled crust, smoothing the top with a spatula.
- Top with raspberries: Decoratively arrange fresh raspberries on top of the ganache.
- Chill the tart: Refrigerate for at least 2 hours until ganache is set.
