Description

A festive chocolate sponge cake rolled with a colorful rainbow whipped cream filling and optionally topped with ganache or powdered sugar. Fun, eye-catching, and delicious—perfect for celebrations and parties.


Ingredients

    1. For the chocolate sponge cake:
    2. 95g all-purpose flour (3/4 cup)
    3. 30g unsweetened cocoa powder (1/3 cup)
    4. 1 tsp baking powder
    5. 1/4 tsp salt
    6. 4 large eggs
    7. 150g granulated sugar (3/4 cup)
    8. 60ml vegetable oil or melted butter (1/4 cup)
    9. 1 tsp vanilla extract
    10. 60ml milk (1/4 cup)

 

    1. For the rainbow filling:
    2. 480ml heavy whipping cream (2 cups)
    3. 60g powdered sugar (1/2 cup)
    4. 1 tsp vanilla extract
    5. Gel food coloring (red, orange, yellow, green, blue, purple)

  2. Chocolate ganache or glaze
  3. Powdered sugar
  4. Sprinkles

Instructions

Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.

  1. In a bowl, sift together flour, cocoa powder, baking powder, and salt.
  2. In a large bowl, beat eggs and sugar until thick, pale, and fluffy. Add oil, vanilla, and milk; mix until combined.
  3. Gently fold dry ingredients into wet mixture until just combined.
  4. Spread batter evenly in prepared pan. Bake 10–12 minutes, until cake springs back when lightly pressed.
  5. While warm, invert cake onto a clean towel dusted with powdered sugar. Peel off parchment, then roll cake in towel from short end. Let cool completely.
  6. Whip cream with powdered sugar and vanilla until stiff peaks form. Divide into 6 bowls and tint each with a different color.
  7. Unroll cooled cake and spread rainbow filling in horizontal lines across surface. Re-roll tightly.
  8. Refrigerate 1–2 hours to set.
  9. Optional: Top with chocolate ganache, powdered sugar, or sprinkles before slicing and serving.

  1. Add a thin layer of ganache before rainbow filling for extra richness.
  2. Use marshmallow filling instead of whipped cream for fluffier texture.
