Description

Chocolate Peanut Butter Stuffed Dates are a sweet, satisfying treat that combines the natural sweetness of dates, creamy peanut butter, and a smooth chocolate coating.

Ingredients

  1. For the filling:
    • 12 Medjool dates, pitted
    • 1/2 cup peanut butter (or almond butter)
  2. For the chocolate coating:
    • 1/4 cup dark chocolate chips (or milk chocolate chips)
    • 1 tbsp coconut oil (for melting chocolate)
  3. Optional:
    • Pinch of sea salt

Instructions

Prepare the dates: Slice each date lengthwise and remove the pit. Be careful not to cut all the way through; just create a pocket for the peanut butter filling.

  1. Stuff the dates: Spoon about 1-2 teaspoons of peanut butter into the center of each date. Gently press the date closed to seal in the peanut butter. Optionally, sprinkle a small pinch of sea salt on top of the peanut butter for a salty-sweet contrast.
  2. Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  3. Coat the dates: Dip each stuffed date into the melted chocolate, covering it completely. Allow any excess chocolate to drip off before placing the date on a parchment-lined baking sheet.
  4. Chill the dates: Refrigerate the chocolate-covered dates for about 15-20 minutes or until the chocolate is firm and set.
  5. Serve: Once the chocolate has hardened, your Chocolate Peanut Butter Stuffed Dates are ready to enjoy! Serve them chilled or at room temperature.

Notes

  • For a nut-free version, substitute the peanut butter with sunflower seed butter.
  • Experiment with different chocolate coatings like white chocolate or dark chocolate for variety.
  • Feel free to add chopped nuts, shredded coconut, or chia seeds on top for extra texture and crunch.
  • These can be frozen for up to 1 month. Store them in an airtight container and thaw slightly before serving.
