Description

Ingredients

  1. 1/2 cup heavy cream
  2. 1/2 cup semi-sweet chocolate chips
  3. 1/2 cup creamy peanut butter
  4. 1/2 cup powdered sugar
  5. 1 tsp vanilla extract
  6. 1/2 cup heavy cream (for whipping)

Instructions

In a small microwave-safe bowl, combine the semi-sweet chocolate chips and 1/2 cup of heavy cream. Heat in the microwave in 20-second intervals, stirring after each, until smooth. Let the chocolate cool slightly.

  1. In a medium bowl, mix the creamy peanut butter, powdered sugar, and vanilla extract until smooth.
  2. In a separate bowl, whip the remaining 1/2 cup heavy cream until stiff peaks form. Be careful not to overwhip.
  3. Gently fold the melted chocolate into the peanut butter mixture until fully combined. Then, gently fold in the whipped cream, a third at a time, until smooth and fluffy.
  4. Spoon the mousse into individual serving cups and refrigerate for at least 2 hours or until set.
  5. Serve chilled and garnish with chocolate shavings, whipped cream, or crushed peanuts if desired.

Notes

  • For a richer taste, swirl in some chocolate ganache before chilling.
  • If you want a crunchier texture, use crunchy peanut butter instead of creamy.
  • For a dairy-free version, substitute the heavy cream with coconut cream and use dairy-free chocolate and peanut butter.
