Description

These Chocolate Peanut Butter Crunch Bars are a delicious dairy-free treat combining rich cacao, creamy natural peanut butter, and crunchy rice cereal. Perfect for a quick dessert or snack, they require no baking and come together in just 40 minutes, including chilling time.

Ingredients

Wet Ingredients

  • 1/3 cup solid coconut oil
  • 1/3 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 tbsp maple syrup

Dry Ingredients

  • 1/2 cup cacao powder
  • 2 cups crispy rice cereal
  • 1/2 tsp sea salt (optional)

Instructions

  1. Combine Wet Ingredients: In a medium pot, combine the solid coconut oil, 1/4 cup maple syrup, and natural peanut butter. Heat over extremely low heat, stirring continuously until the coconut oil is completely melted and the mixture is smooth and homogenous.
  2. Add Cacao Powder: Stir in the cacao powder carefully, whisking until the mixture is free of lumps and has a smooth chocolate consistency.
  3. Mix in Rice Cereal: Pour the crispy rice cereal into the pot and gently fold it into the chocolate mixture, ensuring all the pieces are evenly coated.
  4. Prepare the Pan: Line an 8 by 4 inch pan with parchment paper. Transfer the mixture into the pan and use a silicone spatula to spread it evenly and smooth the surface. Sprinkle the sea salt over the top if using.
  5. Chill the Bars: Place the pan in the freezer and chill for 30 minutes to allow the bars to set firmly.
  6. Serve: Remove from the freezer and let the bars sit for 3 minutes at room temperature before cutting. Enjoy the bars slightly chilled for the best texture.

Notes

  • Use natural peanut butter without added sugar or oils for the best flavor and texture.
  • Crispy rice cereal provides the crunch; make sure it is gluten-free if needed.
  • Freezing time is crucial to ensure bars set properly.
  • Optional sea salt enhances the chocolate and peanut butter flavors.
  • Store leftovers in the freezer to maintain firmness or refrigerate for a softer texture.
