Ingredients
- 6 oz bittersweet or semisweet chocolate, chopped
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 3/4 cup heavy whipping cream
- 1 tsp vanilla extract
- 1 pinch salt
Instructions
Melt chocolate in a heatproof bowl over simmering water or in the microwave in short bursts, stirring until smooth. Let cool slightly.
- In a bowl, beat the egg yolks with half the sugar (2 tbsp) until thick and pale.
- Stir the melted chocolate into the egg yolk mixture until well combined.
- In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form. Set aside.
- In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture until almost combined.
- Fold in the beaten egg whites in two additions until fully incorporated and smooth.
- Spoon the mousse into serving dishes or glasses. Chill for at least 2 hours or until set.
- Top with whipped cream, chocolate shavings, or fresh berries before serving, if desired.
