Ingredients
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup boiling water
- 8 oz semi-sweet or dark chocolate
- 2 cups heavy cream
- 1 tbsp unflavored gelatin (optional)
- 2 tbsp water (for dissolving gelatin, optional)
Instructions
Preheat oven to 350°F (175°C). Grease and line a round cake pan.
- In a large bowl, mix flour, cocoa powder, baking powder, baking soda, and sugar.
- Add eggs, milk, oil, and vanilla extract. Mix until smooth. Stir in boiling water (batter will be thin).
- Pour into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- For the mousse, melt the chocolate and allow it to cool slightly.
- Whip the heavy cream until stiff peaks form.
- Gently fold the melted chocolate into the whipped cream until fully combined.
- If using gelatin, dissolve it in warm water and mix it into the mousse for added stability.
- Place the cooled cake in a springform pan. Pour mousse over the top and smooth the surface.
- Refrigerate for at least 4 hours or overnight until set.
- Remove from pan, garnish as desired, slice, and serve chilled.

- Let the cake cool completely before adding mousse to prevent melting.
- Gelatin helps stabilize the mousse for cleaner slices.
