Description

Chocolate Covered Pineapple is a refreshing treat that combines the tangy sweetness of fresh pineapple with the richness of smooth, melted chocolate. A perfect snack or dessert for any occasion, these bites are easy to make and sure to impress.

Ingredients

  1. 1 fresh pineapple (peeled, cored, and cut into bite-sized chunks or wedges)
8 oz dark chocolate (or milk chocolate, depending on your preference)
1 tablespoon coconut oil (optional, for smoother coating)
1/4 cup chopped nuts (such as almonds, pistachios, or walnuts), shredded coconut, or sprinkles for topping (optional)

Instructions

Prepare the Pineapple: Peel, core, and cut the pineapple into bite-sized chunks or wedges. Arrange them on a parchment-lined baking sheet, ensuring they don’t touch each other.

  1. Melt the Chocolate: In a heatproof bowl, melt the chocolate over simmering water (double boiler method) or microwave in 20-second intervals, stirring between each, until smooth. If desired, stir in 1 tablespoon coconut oil for a smoother coating.
  2. Dip the Pineapple: Use a fork or tongs to dip each pineapple piece into the melted chocolate, coating about half to three-quarters of the pineapple in chocolate.
  3. Add Toppings (Optional): While the chocolate is still wet, sprinkle chopped nuts, shredded coconut, or sprinkles on top for extra texture and flavor.
  4. Chill: Place the chocolate-covered pineapple pieces back on the parchment-lined baking sheet and refrigerate for about 30 minutes, or until the chocolate has fully set. Alternatively, freeze for 10-15 minutes to speed up the process.
  5. Serve: Once the chocolate has hardened, serve immediately or store in an airtight container in the refrigerator for up to 2-3 days.

Notes

  • If using toppings like nuts or coconut, make sure to add them right after dipping while the chocolate is still wet.
  • For a more indulgent treat, drizzle with caramel sauce or top with whipped cream.
  • Store leftover chocolate-covered pineapple in the refrigerator to prevent the chocolate from softening.
