Description
Chocolate Covered Cherry Scones combine the rich flavors of chocolate and cherries with the crumbly, flaky texture of a traditional scone, making them a perfect treat for any occasion.
Ingredients
- 2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon (optional)
1/2 cup cold unsalted butter, cubed
1/2 cup heavy cream (or buttermilk)
1 large egg
1 teaspoon vanilla extract
1/2 cup dried cherries or fresh cherries, chopped
1/2 cup chocolate chips or chopped chocolate
1/4 cup powdered sugar (for glaze, optional)
1 tablespoon milk or heavy cream (for glaze, optional)
1/2 teaspoon vanilla extract (for glaze, optional)
Instructions
Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
- Cut in the butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter, fork, or your fingers to cut the butter into the flour mixture until the mixture resembles coarse crumbs with pea-sized bits of butter.
- Add the wet ingredients: In a separate bowl, whisk together the heavy cream (or buttermilk), egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the cherries and chocolate: Gently fold in the chopped cherries and chocolate chips or chopped chocolate.
- Shape the dough: Turn the dough out onto a floured surface and gently pat it into a circle about 1-inch thick. Cut the dough into 8 wedges (or cut out circles with a biscuit cutter).
- Bake the scones: Place the scones on the prepared baking sheet, leaving space between them. Bake for 18-20 minutes, or until golden brown on top.
- Prepare the glaze (optional): In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth.
- Drizzle the glaze: Once the scones are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the scones while they are still warm.
- Serve and enjoy: Allow the glaze to set before serving. Enjoy the scones with a cup of tea or coffee!
Notes
- Fresh cherries: If using fresh cherries, remove the pits and chop them into smaller pieces before adding to the dough.
- Vegan option: Replace the butter with a plant-based butter substitute and use non-dairy milk for the cream and glaze. You can also use a flax egg as an egg replacement.
- Add nuts: Add chopped walnuts, almonds, or pecans for extra crunch.
- Glazed version: Use chocolate in the glaze for a richer chocolate drizzle.
