Description

Chocolate Covered Cherry Scones combine the rich flavors of chocolate and cherries with the crumbly, flaky texture of a traditional scone, making them a perfect treat for any occasion.

Ingredients

  1. 2 cups all-purpose flour
    1/4 cup granulated sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1/2 teaspoon cinnamon (optional)
1/2 cup cold unsalted butter, cubed
1/2 cup heavy cream (or buttermilk)
    1 large egg
    1 teaspoon vanilla extract
1/2 cup dried cherries or fresh cherries, chopped
1/2 cup chocolate chips or chopped chocolate
1/4 cup powdered sugar (for glaze, optional)
1 tablespoon milk or heavy cream (for glaze, optional)
1/2 teaspoon vanilla extract (for glaze, optional)

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  1. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
  2. Cut in the butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter, fork, or your fingers to cut the butter into the flour mixture until the mixture resembles coarse crumbs with pea-sized bits of butter.
  3. Add the wet ingredients: In a separate bowl, whisk together the heavy cream (or buttermilk), egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the cherries and chocolate: Gently fold in the chopped cherries and chocolate chips or chopped chocolate.
  5. Shape the dough: Turn the dough out onto a floured surface and gently pat it into a circle about 1-inch thick. Cut the dough into 8 wedges (or cut out circles with a biscuit cutter).
  6. Bake the scones: Place the scones on the prepared baking sheet, leaving space between them. Bake for 18-20 minutes, or until golden brown on top.
  7. Prepare the glaze (optional): In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth.
  8. Drizzle the glaze: Once the scones are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the scones while they are still warm.
  9. Serve and enjoy: Allow the glaze to set before serving. Enjoy the scones with a cup of tea or coffee!

Notes

  • Fresh cherries: If using fresh cherries, remove the pits and chop them into smaller pieces before adding to the dough.
  • Vegan option: Replace the butter with a plant-based butter substitute and use non-dairy milk for the cream and glaze. You can also use a flax egg as an egg replacement.
  • Add nuts: Add chopped walnuts, almonds, or pecans for extra crunch.
  • Glazed version: Use chocolate in the glaze for a richer chocolate drizzle.
