Description
Chocolate Chip Cookie Ice Cream Sandwiches are the ultimate frozen treat—chewy cookies sandwiching creamy ice cream, with optional fun coatings like sprinkles or chocolate chips. They’re easy to assemble, customizable, and perfect for parties or make-ahead desserts.
Ingredients
- 12–16 chocolate chip cookies (homemade or store-bought, soft-style preferred)
- 1 pint ice cream (vanilla, chocolate, or your favorite flavor)
- Optional: mini chocolate chips, rainbow sprinkles, chopped nuts, or crushed cookies (for rolling the edges)
- Parchment paper or plastic wrap (for wrapping and freezing)
Instructions
Soften Ice Cream: Let the ice cream sit at room temperature for 5–10 minutes until scoopable but not melted.
- Pair Cookies: Lay out the cookies in pairs of similar size and shape, bottom sides facing up.
- Assemble: Place a scoop of ice cream (about ¼ cup) onto one cookie. Top with the second cookie and press gently until the ice cream spreads to the edges.
- Optional Coating: Roll the edges in your chosen toppings (sprinkles, mini chocolate chips, etc.).
- Freeze: Wrap each sandwich in parchment or plastic wrap. Freeze on a tray for at least 2–3 hours, or until firm.
- Serve: Let sit at room temperature for 2–3 minutes before eating for easier biting.
Notes
- For best results, slightly underbake homemade cookies to keep them soft after freezing.
- Use a butter knife to smooth out the ice cream edges for a neater presentation.
- To make mini sandwiches, use smaller cookies and less ice cream per sandwich.
