Ingredients
Pudding Base
- 1 ½ cup unsweetened almond milk or milk of choice (plus more as needed)
- 6 Tablespoons chia seeds
- 2-3 Tablespoons maple syrup (honey or sweetener of choice)
- 2 Tablespoons cocoa powder
- ⅛ teaspoon salt
- 1 teaspoon vanilla extract
Toppings (Optional)
- Fresh raspberries
- Chocolate chips
- Nuts
Instructions
- Combine Ingredients: Add almond milk, chia seeds, maple syrup, cocoa powder, vanilla extract, and salt to a large bowl or mason jar.
- Whisk Thoroughly: Whisk or shake the mixture vigorously to ensure all ingredients are fully combined and the cocoa powder is evenly distributed.
- Rest and Stir: Let the mixture sit for 5 minutes, then whisk or shake again to break up any clumps formed by the chia seeds or cocoa powder.
- Refrigerate Overnight: Cover the bowl or jar and place it in the refrigerator overnight or for at least 4 hours to let the pudding thicken and the chia seeds to absorb liquid.
- Adjust Consistency: When ready to serve, stir the pudding and add more almond milk if it is too thick to your liking.
- Serve with Toppings: Serve chilled topped with fresh raspberries, chocolate chips, nuts, or any toppings of your choice.
Notes
- Use more or less sweetener to adjust the sweetness to your taste.
- For a creamier texture, use full-fat coconut milk instead of almond milk.
- Chia seeds expand significantly, so be sure the container is large enough to hold the mixture.
- The pudding can be stored in the refrigerator for up to 4 days.
- Ensure to stir the pudding well before serving as chia seeds tend to settle at the bottom.
