Ingredients

  1. 24 chocolate sandwich cookies or chocolate wafers, crushed
  2. 6 tablespoons unsalted butter, melted
  3. 8 oz semi-sweet or dark chocolate, chopped
  4. 1 cup heavy cream
  5. 2 tablespoons unsalted butter (for ganache)
  6. 2 cups fresh or jarred cherries, pitted and halved
  7. 1/4 cup cherry preserves (optional)

Instructions

Preheat oven to 350°F (175°C). Combine crushed chocolate cookies with melted butter and press into a tart pan with a removable bottom. Bake for 8 minutes, then cool completely.

  1. Heat heavy cream until just simmering. Pour over chopped chocolate and 2 tablespoons butter. Let sit for 2–3 minutes, then stir until smooth to form ganache.
  2. Spread a thin layer of cherry preserves over the cooled crust, if using.
  3. Pour the ganache into the crust and smooth the top.
  4. Arrange cherries over the ganache while still soft, gently pressing them in.
  5. Refrigerate for at least 2 hours, or until the ganache is set.
  6. Slice and serve chilled or at room temperature.

Notes

  • Use a tart pan with a removable bottom for easy serving.
  • Frozen cherries can be used, but pat them dry before adding.
  • Ganache will firm up in the fridge but remain creamy.
