Ingredients
- 24 chocolate sandwich cookies or chocolate wafers, crushed
- 6 tablespoons unsalted butter, melted
- 8 oz semi-sweet or dark chocolate, chopped
- 1 cup heavy cream
- 2 tablespoons unsalted butter (for ganache)
- 2 cups fresh or jarred cherries, pitted and halved
- 1/4 cup cherry preserves (optional)
Instructions
Preheat oven to 350°F (175°C). Combine crushed chocolate cookies with melted butter and press into a tart pan with a removable bottom. Bake for 8 minutes, then cool completely.
- Heat heavy cream until just simmering. Pour over chopped chocolate and 2 tablespoons butter. Let sit for 2–3 minutes, then stir until smooth to form ganache.
- Spread a thin layer of cherry preserves over the cooled crust, if using.
- Pour the ganache into the crust and smooth the top.
- Arrange cherries over the ganache while still soft, gently pressing them in.
- Refrigerate for at least 2 hours, or until the ganache is set.
- Slice and serve chilled or at room temperature.
Notes
- Use a tart pan with a removable bottom for easy serving.
- Frozen cherries can be used, but pat them dry before adding.
- Ganache will firm up in the fridge but remain creamy.
- For a flavor boost, add 1 tablespoon kirsch or cherry liqueur to the ganache.
