Ingredients

Dry Ingredients

  • 225g (8 oz) granulated sugar
  • 50g (scant 2 oz) plain flour
  • 5ml (1 tsp) baking powder
  • 1.25ml (¼ tsp) salt

Chocolate & Nuts

  • 100g (4 oz) pistachios
  • 100g (4 oz) dark chocolate (70%), broken into small chunks, plus extra for topping

Wet Ingredients

  • 100g (4 oz) unsalted butter
  • 2 eggs


Instructions

  1. Prepare the Baking Tin and Roast Pistachios: Line an 18x28cm (7×11 inch) tin with baking parchment, allowing the paper to extend about 2cm (1 inch) above the edges. Preheat your oven to 180°C (350°F/gas mark 4). Roughly chop the pistachios so they remain chunky, then roast them in the preheated oven for 8 minutes. This step is optional but enhances the nutty flavor.
  2. Melt Chocolate and Butter: Place the butter and dark chocolate chunks in a heatproof metal or Pyrex bowl resting over a pan with barely simmering water. Stir occasionally until the chocolate melts and the mixture is smooth. Remove from heat once fully melted.
  3. Combine Ingredients: Beat in the eggs, followed by the granulated sugar, flour, baking powder, salt, and roasted pistachios. Mix thoroughly until you achieve a consistent batter.
  4. Bake the Brownies: Pour the batter evenly into the prepared baking tin and place it in the center of the oven. Bake for approximately 30 minutes, or until the middle feels slightly springy to the touch.
  5. Cool and Serve: Remove the brownies from the oven and let them cool in the tin for 10 minutes. Use a palette knife to transfer the brownies onto a wire cooling rack. Allow them to cool fully or serve slightly warm, cut into about 15 squares.
