Chocolate and Marshmallow S’mores Cake is a decadent layered dessert with a graham cracker crust, rich chocolate cake, gooey marshmallow topping, and a luscious chocolate drizzle. It captures the nostalgic flavor of campfire s’mores in an indulgent cake form.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups marshmallow fluff or marshmallow creme
- 2 cups mini marshmallows
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
- Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into bottoms of pans to form crusts. Bake 8 minutes, then cool slightly.
- In a bowl, whisk flour, cocoa, baking powder, baking soda, and salt.
- In another bowl, beat eggs, milk, oil, and vanilla. Gradually add dry mixture, then stir in boiling water until smooth.
- Pour batter over graham crusts. Bake 30–35 minutes, until a toothpick inserted comes out clean. Cool completely.
- Spread marshmallow fluff between the cooled cake layers. Cover the cake with marshmallow fluff or mini marshmallows on top.
- Toast topping with a kitchen torch or under the broiler until golden.
- Heat cream and pour over chocolate chips. Stir until smooth to make ganache. Drizzle over toasted marshmallow topping.
- Garnish with extra graham cracker crumbs or chocolate pieces, if desired.
Notes
- For a shortcut, use a chocolate cake mix.
- Add peanut butter between the layers for a s’mores twist.
- Cupcakes can be made with graham crusts, chocolate batter, and marshmallow topping in muffin tins.
- Prepare marshmallow topping just before serving for best texture.
