Description

Ingredients

  1. 2 cups cooked chicken breast, shredded or diced
    4 cups shredded napa cabbage or green cabbage
    1 cup shredded carrots
    1 red bell pepper, thinly sliced
    3 green onions, sliced
    1/2 cup sliced almonds or chopped peanuts
    1 cup crispy chow mein noodles or fried wonton strips
    1/4 cup fresh cilantro, chopped
    For the Dressing:
    3 tablespoons soy sauce or tamari
    2 tablespoons rice vinegar
    1 tablespoon sesame oil
    1 tablespoon honey or maple syrup
    1 teaspoon grated fresh ginger
    1 clove garlic, minced
    1 teaspoon toasted sesame seeds

Instructions

In a large bowl, combine cooked chicken, cabbage, carrots, bell pepper, green onions, and cilantro.

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and sesame seeds to make the dressing.
  2. Pour dressing over the salad and toss well to coat evenly.
  3. Just before serving, sprinkle sliced almonds and crispy noodles on top.
  4. Serve immediately for maximum crunch.
