Ingredients
- 12 ounces cheese tortellini (fresh or frozen)
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup black olives, sliced
1/4 cup bell pepper, diced (optional)
1/4 cup feta cheese, crumbled (optional)
1/4 cup fresh basil, chopped (optional)
For the dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1 garlic clove, minced
Salt and pepper to taste
Instructions
Cook the tortellini according to the package instructions. Drain and rinse under cold water to stop the cooking process and cool the pasta.
- In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, and bell pepper (if using).
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.
- Pour the dressing over the salad and toss to coat evenly.
- If using, sprinkle crumbled feta cheese and chopped basil over the top and give it a final gentle toss.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
