Ingredients
- 1 (15-ounce) can chickpeas, drained and rinsed
1/4 cup vegan mayonnaise or regular mayonnaise
1 tablespoon Dijon mustard
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon capers, chopped (optional)
1/2 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
Optional: fresh dill or parsley, chopped 
Instructions
In a medium bowl, mash the chickpeas with a fork or potato masher until chunky but mostly broken down.
- Add vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper; mix well.
 - Stir in chopped celery, red onion, and capers if using.
 - Adjust seasoning to taste and add fresh herbs if desired.
 - Serve chilled on bread, in wraps, or over a bed of greens.
