Description

Ingredients

  1. 1 (15-ounce) can chickpeas, drained and rinsed
    1/4 cup vegan mayonnaise or regular mayonnaise
    1 tablespoon Dijon mustard
    1/4 cup celery, finely chopped
    1/4 cup red onion, finely chopped
    1 tablespoon fresh lemon juice
    1 teaspoon capers, chopped (optional)
    1/2 teaspoon garlic powder
    Salt and freshly ground black pepper, to taste
    Optional: fresh dill or parsley, chopped

Instructions

In a medium bowl, mash the chickpeas with a fork or potato masher until chunky but mostly broken down.

  1. Add vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper; mix well.
  2. Stir in chopped celery, red onion, and capers if using.
  3. Adjust seasoning to taste and add fresh herbs if desired.
  4. Serve chilled on bread, in wraps, or over a bed of greens.
