Description

Chickpea Cookie Dough Bites are a healthy, no-bake treat made with chickpeas, almond butter, and maple syrup, offering a sweet, chewy snack that’s rich in protein, fiber, and healthy fats. Perfect for satisfying cookie dough cravings guilt-free.

Ingredients

  1. 1 can (15 oz) chickpeas, drained and rinsed
  2. 2 tablespoons almond butter (or peanut butter)
  3. 2 tablespoons maple syrup (or honey)
  4. 1 teaspoon vanilla extract
  5. 1/4 teaspoon salt
  6. 1/4 cup oat flour (or rolled oats, blended into flour)
  7. 1/4 cup mini chocolate chips (optional)
  8. 1 tablespoon ground flaxseed (optional for added fiber)

Instructions

In a food processor or blender, combine the drained chickpeas, almond butter, maple syrup, vanilla extract, salt, and oat flour. Blend until smooth, scraping down the sides as needed.

  1. Once the mixture is fully blended and dough-like, fold in the chocolate chips and ground flaxseed (if using).
  2. Use your hands to roll the dough into small, bite-sized balls, about 1 inch in diameter.
  3. Place the cookie dough bites on a parchment-lined tray or plate and refrigerate for 30 minutes to firm up.
  4. Once chilled, store the bites in an airtight container in the refrigerator for up to a week, or freeze for longer storage.

Notes

  • Nut butter options: Substitute almond butter with peanut butter, cashew butter, or sunflower seed butter for different flavors.
  • Sweetener alternatives: Use stevia, monk fruit sweetener, or a sugar-free maple syrup substitute for a sugar-free option.
  • Mix-ins: Add raisins, dried cranberries, or chopped nuts for added texture.
  • Protein boost: Add a scoop of protein powder to the mixture for a higher-protein version.
  • Storage: Store in the fridge for up to 1 week or freeze for up to 2 months.
