Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
2 tablespoons butter
1 teaspoon lemon juice
1 teaspoon dried thyme (or fresh)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, and dried thyme.
- Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
- Pour in the chicken broth and use a wooden spoon to scrape up any brown bits from the bottom of the skillet.
- Reduce the heat to medium-low and add the heavy cream, butter, and lemon juice. Stir well to combine, allowing the sauce to simmer and thicken for 2-3 minutes.
- Return the chicken to the skillet, spoon some sauce over the top, and cook for an additional 2-3 minutes to heat the chicken through and coat it in the sauce.
- Garnish with fresh parsley before serving.
