Description

This Chicken Teriyaki Bowl is a quick and flavorful dish featuring tender chicken breasts coated in a savory teriyaki sauce, served with steamed rice and fresh vegetables. Perfect for busy nights or meal prep, it’s a satisfying and nutritious option for lunch or dinner. Customize it with your favorite veggies or a spicy twist!

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup teriyaki sauce (store-bought or homemade)

  • 2 tablespoons olive oil

  • 2 cups steamed rice (white or brown)

  • 1 cup broccoli florets

  • 1 carrot, julienned

  • 1 tablespoon sesame seeds

  • 2 green onions, chopped

  • 1 tablespoon rice vinegar (optional for added tang)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.

  • In the same skillet, add teriyaki sauce and bring it to a simmer. For extra tang, stir in rice vinegar. Stir occasionally to avoid burning.

  • Once the sauce thickens, return the chicken to the skillet, coating it in the sauce. Simmer for 2-3 minutes to absorb the flavors.

  • Steam the broccoli and prepare the rice while the chicken simmers.

  • To assemble, layer rice in bowls, then top with broccoli, julienned carrots, and sliced teriyaki chicken.

  • Garnish with sesame seeds and chopped green onions. Serve immediately.

Notes

  • Vegetarian Option: Replace chicken with tofu or tempeh. Press and cube tofu before pan-frying.

  • Add More Veggies: Feel free to customize with bell peppers, snow peas, or spinach.

  • Spicy Teriyaki: Add sriracha or chili flakes to the sauce for some heat
