Ingredients
-
4 boneless, skinless chicken breasts
 -
1 cup teriyaki sauce (store-bought or homemade)
 -
2 tablespoons olive oil
 -
2 cups steamed rice (white or brown)
 -
1 cup broccoli florets
 -
1 carrot, julienned
 -
1 tablespoon sesame seeds
 -
2 green onions, chopped
 -
1 tablespoon rice vinegar (optional for added tang)

Instructions
-
Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
 -
In the same skillet, add teriyaki sauce and bring it to a simmer. For extra tang, stir in rice vinegar. Stir occasionally to avoid burning.
 -
Once the sauce thickens, return the chicken to the skillet, coating it in the sauce. Simmer for 2-3 minutes to absorb the flavors.
 -
Steam the broccoli and prepare the rice while the chicken simmers.
 -
To assemble, layer rice in bowls, then top with broccoli, julienned carrots, and sliced teriyaki chicken.
 -
Garnish with sesame seeds and chopped green onions. Serve immediately.

Notes
-
Vegetarian Option: Replace chicken with tofu or tempeh. Press and cube tofu before pan-frying.
 -
