Ingredients

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 teaspoon Italian seasoning

8 oz pasta (penne, fettuccine, or your choice)

2 cups chicken broth

1 cup heavy cream

2 cups fresh baby spinach

½ cup grated Parmesan cheese

1 tablespoon lemon juice (optional, for brightness)


Instructions

  • Cook pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.

  • Cook chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Add to skillet and cook 5–7 minutes until golden and cooked through. Remove and set aside.

  • Sauté garlic: In the same skillet, lower heat and sauté garlic for about 30 seconds until fragrant.

  • Make sauce: Add chicken broth and heavy cream. Simmer for 2–3 minutes to slightly thicken.

  • Combine: Add cooked pasta, chicken, and spinach to the skillet. Toss until spinach wilts and pasta is coated. Add reserved pasta water as needed to adjust consistency.

  • Finish: Stir in Parmesan cheese and lemon juice (if using). Taste and adjust seasoning.

  • Serve: Plate immediately and top with extra Parmesan if desired.
