Ingredients
2 tablespoons olive oil
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
3 cloves garlic, minced
1 teaspoon Italian seasoning
8 oz pasta (penne, fettuccine, or your choice)
2 cups chicken broth
1 cup heavy cream
2 cups fresh baby spinach
½ cup grated Parmesan cheese
1 tablespoon lemon juice (optional, for brightness)

Cook pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.

Cook chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Add to skillet and cook 5–7 minutes until golden and cooked through. Remove and set aside.
