Ingredients
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 4 chicken sausages (flavor of your choice)
- 1 tablespoon fresh parsley or cilantro, chopped (optional, for garnish)
- 1/4 cup shredded cheese (optional, such as cheddar or mozzarella)
- 1 tablespoon balsamic glaze (optional, for drizzling)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Place the cubed sweet potatoes on the prepared baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss to coat and roast in the oven for 20-25 minutes, or until tender and golden brown. Toss halfway through for even cooking.
- While the sweet potatoes roast, heat a skillet over medium heat. Slice the chicken sausages into 1/2-inch slices or crumble them. Cook for 5-7 minutes until browned and cooked through. Remove from heat and set aside.
- Once the sweet potatoes are done, remove them from the oven and cool for a few minutes. Arrange the sweet potato cubes on a serving platter, then top each with a slice or crumbled piece of cooked chicken sausage. If using cheese, sprinkle it on top and return to the oven for 2-3 minutes until melted.
- Drizzle with balsamic glaze and garnish with fresh parsley or cilantro. Serve immediately or refrigerate for up to 2 hours before serving.
