Ingredients

  1. 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  2. 1 tablespoon olive oil
  3. Salt and freshly ground black pepper, to taste
  4. 4 chicken sausages (flavor of your choice)
  5. 1 tablespoon fresh parsley or cilantro, chopped (optional, for garnish)
  6. 1/4 cup shredded cheese (optional, such as cheddar or mozzarella)
  7. 1 tablespoon balsamic glaze (optional, for drizzling)

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  1. Place the cubed sweet potatoes on the prepared baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss to coat and roast in the oven for 20-25 minutes, or until tender and golden brown. Toss halfway through for even cooking.
  2. While the sweet potatoes roast, heat a skillet over medium heat. Slice the chicken sausages into 1/2-inch slices or crumble them. Cook for 5-7 minutes until browned and cooked through. Remove from heat and set aside.
  3. Once the sweet potatoes are done, remove them from the oven and cool for a few minutes. Arrange the sweet potato cubes on a serving platter, then top each with a slice or crumbled piece of cooked chicken sausage. If using cheese, sprinkle it on top and return to the oven for 2-3 minutes until melted.
  4. Drizzle with balsamic glaze and garnish with fresh parsley or cilantro. Serve immediately or refrigerate for up to 2 hours before serving.
