Ingredients
- 2 cups cooked chicken, shredded
1/2 cup mayonnaise
1/4 cup plain Greek yogurt (optional)
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup grapes, halved (optional)
1/4 cup chopped walnuts (optional)
Salt and pepper to taste
4 to 6 croissants, split in half
Instructions
In a large bowl, combine the shredded chicken, mayonnaise, Greek yogurt (if using), Dijon mustard, and lemon juice. Stir well until everything is evenly mixed.
- Add the chopped celery, red onion, grapes (if using), and walnuts (if using) to the mixture. Stir again to combine.
- Season the chicken salad with salt and pepper to taste. Adjust any ingredients as desired to suit your preference.
- Carefully slice the croissants in half horizontally.
- Spoon the chicken salad onto the bottom half of each croissant. Top with the other half of the croissant and press gently to close.
- Serve immediately or refrigerate until ready to serve.

- You can make the chicken salad up to 24 hours in advance. Store it in the refrigerator in an airtight container until you’re ready to serve.
- To avoid soggy croissants, serve the chicken salad immediately after assembling, or keep the salad and croissants separate until ready to serve.
