Description

Ingredients

  • 2 boneless, skinless chicken breasts
    1/4 cup pesto (store-bought or homemade)
    4 slices of bread (ciabatta, sourdough, or whole grain)
    2 tablespoons olive oil (for grilling)
    1 cup fresh mozzarella cheese, sliced (optional)
    1/2 cup arugula or spinach (optional)
    1 medium tomato, sliced (optional)
    Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a skillet or grill pan over medium heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the pan and set aside to rest for a few minutes before slicing.
  2. While the chicken is cooking, toast the bread slices in a separate pan or toaster until they are golden and crispy. You can brush the bread with a little olive oil for extra flavor.
  3. Spread a generous amount of pesto on each slice of toasted bread. Layer the sliced chicken on one slice of bread, followed by fresh mozzarella cheese, arugula (or spinach), and tomato slices. Top with the other slice of bread, pesto side down.
