Chicken Kaborona is a rich, flavorful dish featuring tender chicken cooked in a spiced tomato-based sauce. Infused with aromatic spices like cumin, coriander, and garam masala, this dish is perfect for family meals, special occasions, or a comforting dinner. Serve it with rice, naan, or roti for a delicious experience.

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 cup tomatoes, pureed
  • 1/2 cup yogurt
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  • Sauté the onions: Heat oil in a large pot over medium heat. Add chopped onions and cook until golden brown (5-7 minutes).
  • Add aromatics: Stir in garlic and ginger, cooking for another 2 minutes until fragrant.
  • Toast the spices: Add coriander, cumin, paprika, turmeric, chili powder, and garam masala. Stir and cook for 1-2 minutes.
  • Cook the tomatoes: Pour in the pureed tomatoes and cook for 5 minutes, stirring occasionally, until the sauce thickens.
  • Cook the chicken: Add the chicken pieces, season with salt, and stir to coat. Cook for 10 minutes.
  • Simmer: Add yogurt, mix well, cover, and let simmer for 25-30 minutes until the chicken is tender.
  • Garnish & Serve: Sprinkle with fresh cilantro and serve hot with rice or naan.

Notes

  • For a vegetarian option, substitute chicken with paneer or tofu.
  • Adjust the spice level by adding or reducing chili powder.
  • Substitute coconut milk for yogurt to make a creamier sauce.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
