Chicken Kaborona is a rich, flavorful dish featuring tender chicken cooked in a spiced tomato-based sauce. Ingredients
- 1 whole chicken, cut into pieces
- 2 tablespoons oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- 1 cup tomatoes, pureed
- 1/2 cup yogurt
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Sauté the onions: Heat oil in a large pot over medium heat. Add chopped onions and cook until golden brown (5-7 minutes).
- Add aromatics: Stir in garlic and ginger, cooking for another 2 minutes until fragrant.
- Toast the spices: Add coriander, cumin, paprika, turmeric, chili powder, and garam masala. Stir and cook for 1-2 minutes.
- Cook the tomatoes: Pour in the pureed tomatoes and cook for 5 minutes, stirring occasionally, until the sauce thickens.
- Cook the chicken: Add the chicken pieces, season with salt, and stir to coat. Cook for 10 minutes.
- Simmer: Add yogurt, mix well, cover, and let simmer for 25-30 minutes until the chicken is tender.
- Garnish & Serve: Sprinkle with fresh cilantro and serve hot with rice or naan.
