Description

This Chicken Fried Rice recipe is the perfect solution for a quick, flavorful, and satisfying meal. Ingredients

  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breasts, diced
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 4 cups cooked rice (preferably day-old)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 2 green onions, chopped
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until browned and fully cooked through (about 5-6 minutes). Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of oil. Add the beaten eggs and scramble until cooked. Push the eggs to the side of the pan.
  • Add garlic, peas, and carrots to the skillet. Stir-fry for 2-3 minutes until the vegetables are heated through.
  • Add the cooked rice to the skillet and break up any clumps with a spatula. Stir to combine everything.
  • Return the cooked chicken to the skillet and mix with rice and vegetables.
  • Add soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Stir well, making sure the rice is evenly coated with the sauces.
  • Cook for another 2-3 minutes to allow the flavors to meld. Stir in chopped green onions and cilantro (if using).
  • Serve hot and enjoy!

Notes

  • For Vegetarian Fried Rice: Omit the chicken and add extra vegetables like mushrooms, bell peppers, or broccoli.
  • For Shrimp Fried Rice: Substitute chicken for shrimp for a seafood twist.
