Ingredients
- 2 tablespoons vegetable oil
- 2 boneless, skinless chicken breasts, diced
- 2 eggs, beaten
- 1 cup frozen peas and carrots, thawed
- 4 cups cooked rice (preferably day-old)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt (or to taste)
- 2 green onions, chopped
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until browned and fully cooked through (about 5-6 minutes). Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of oil. Add the beaten eggs and scramble until cooked. Push the eggs to the side of the pan.
- Add garlic, peas, and carrots to the skillet. Stir-fry for 2-3 minutes until the vegetables are heated through.
- Add the cooked rice to the skillet and break up any clumps with a spatula. Stir to combine everything.
- Return the cooked chicken to the skillet and mix with rice and vegetables.
- Add soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Stir well, making sure the rice is evenly coated with the sauces.
- Cook for another 2-3 minutes to allow the flavors to meld. Stir in chopped green onions and cilantro (if using).
