Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- 4–6 flour tortillas
- Fresh lime wedges (for serving)
- Fresh cilantro (optional, for garnish)
Instructions
- In a small bowl, combine the chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
- Slice the chicken breasts into thin strips and season with the spice mixture. Let it marinate for about 10-15 minutes (or up to an hour for more flavor).
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-6 minutes, or until fully cooked and browned. Remove the chicken from the pan and set aside.
- In the same skillet, add the remaining olive oil. Add the sliced bell peppers and onions and sauté for about 5-6 minutes, until they are tender and slightly caramelized.
- Return the cooked chicken to the skillet with the vegetables. Toss everything together and cook for an additional 2-3 minutes to combine the flavors.
- Warm the tortillas in a dry pan or microwave.
- Serve the chicken fajita mixture in the tortillas with your favorite toppings such as lime wedges, cilantro, sour cream, guacamole, or salsa.
Notes
- Spice Level: Adjust the cayenne pepper or skip it entirely to modify the heat level. You can also add diced jalapeños for extra heat.
- Make Ahead: Marinate the chicken and slice the veggies up to 24 hours ahead of time. Just cook when ready!
- Toppings: Customize your fajitas with sour cream, cheese, salsa, or guacamole for an extra burst of flavor.
