Description

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 46 flour tortillas
  • Fresh lime wedges (for serving)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a small bowl, combine the chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  2. Slice the chicken breasts into thin strips and season with the spice mixture. Let it marinate for about 10-15 minutes (or up to an hour for more flavor).
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-6 minutes, or until fully cooked and browned. Remove the chicken from the pan and set aside.
  4. In the same skillet, add the remaining olive oil. Add the sliced bell peppers and onions and sauté for about 5-6 minutes, until they are tender and slightly caramelized.
  5. Return the cooked chicken to the skillet with the vegetables. Toss everything together and cook for an additional 2-3 minutes to combine the flavors.
  6. Warm the tortillas in a dry pan or microwave.
  7. Serve the chicken fajita mixture in the tortillas with your favorite toppings such as lime wedges, cilantro, sour cream, guacamole, or salsa.
