Ingredients

1 lb chicken breast, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 cup cooked rice (white, brown, or cauliflower rice)

1/4 cup fresh cilantro, chopped

Lime wedges, for garnish

Optional toppings: sour cream, salsa, avocado, shredded cheese


Instructions

  • Prepare the chicken and vegetables: In a small bowl, mix together chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss the chicken slices in the spice mix until evenly coated.
