Description

The Chicken Cheesesteak Skillet is a deliciously easy, one-pan meal that combines tender chicken, savory peppers, onions, and melted cheese, all cooked in a skillet for an irresistible, low-carb version of the classic Philly cheesesteak. Perfect for a quick weeknight dinner or meal prep!

Ingredients

2 boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 onion, thinly sliced

1 bell pepper, thinly sliced (red or green)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

4 slices provolone cheese (or more depending on preference)

1 tablespoon butter (optional for extra flavor)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the sliced onions and bell pepper to the skillet and sauté for 5-6 minutes, or until they begin to soften and caramelize. Season with a pinch of salt and pepper as they cook.

  3. Once the vegetables are softened, remove them from the skillet and set them aside.

  4. In the same skillet, add the thinly sliced chicken. Season the chicken with garlic powder, onion powder, paprika, salt, and pepper. Cook for 6-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

  5. Return the sautéed peppers and onions to the skillet with the chicken. Stir to combine everything.

  6. Add the slices of provolone cheese over the chicken and vegetable mixture. Cover the skillet and cook for 2-3 minutes until the cheese is melted and bubbly.

  7. Optionally, add a tablespoon of butter for extra flavor and creaminess, stirring it in until melted.

  8. Serve immediately and enjoy your cheesy chicken cheesesteak skillet!

Notes

  • Spicy Chicken Cheesesteak: Add sliced jalapeños or a pinch of red pepper flakes to the chicken mixture for some heat.

  • Cheese Options: While provolone is classic, you can also use mozzarella, cheddar, or even a spicy pepper jack for a different flavor.

  • Add Mushrooms: For an extra savory touch, sauté some sliced mushrooms along with the peppers and onions.

  • Low-Carb Wrap: If you’re following a keto diet and want to make this into a wrap, you can serve the mixture in a low-carb tortilla for a handheld option.
