Description

This Chicken Bhuna recipe is a rich and flavorful Indian curry where tender chicken pieces are simmered in a thick, spiced sauce. Ingredients

1 kg boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

2 onions, finely chopped

4 garlic cloves, minced

1 tablespoon grated fresh ginger

2 tomatoes, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon turmeric

1 teaspoon chili powder (adjust to taste)

1 teaspoon garam masala

Salt, to taste

Fresh cilantro, chopped (for garnish)


Instructions

  1. Sauté Onions: Heat oil in a large pan over medium heat. Add onions and cook until golden brown.

  2. Add Aromatics: Stir in garlic and ginger. Sauté for 2 minutes until fragrant.

  3. Toast Spices: Add cumin, coriander, turmeric, chili powder, and salt. Stir and cook for 2–3 minutes.

  4. Cook Tomatoes: Add chopped tomatoes. Cook for 5–7 minutes until soft and fully blended into the masala.

  5. Add Chicken: Stir in chicken pieces, coating them in the spice mixture. Cook for 8–10 minutes until browned.

  6. Simmer: Lower the heat, cover, and cook for 20–25 minutes, stirring occasionally.

  7. Finish Sauce: Uncover, sprinkle with garam masala, and simmer 5 more minutes to thicken the sauce.

  8. Garnish: Top with chopped cilantro. Serve hot with rice or Indian bread.

Notes

  • Use chicken breast if preferred, though thighs stay juicier.

  • For a creamy twist, stir in plain yogurt at the end.

  • Marinate chicken in yogurt and spices beforehand for deeper flavor.
