Description

Chewy Coconut Macaroon Pyramids are a delightful twist on the classic coconut macaroon, with a crisp golden exterior and chewy, coconut-packed interior. Shaped into fun pyramid forms, these macaroons offer the perfect balance of texture and flavor.

Ingredients

  1. 3 cups sweetened shredded coconut
    1/2 cup granulated sugar
    2 large egg whites
    1/2 teaspoon vanilla extract
    Pinch of salt
    1/4 teaspoon almond extract (optional)
1/4 cup semisweet chocolate chips (optional, for drizzling or dipping)

Instructions

Preheat the oven: Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat.

  1. Mix the ingredients: In a large mixing bowl, combine the shredded coconut, granulated sugar, egg whites, vanilla extract, salt, and almond extract (if using). Stir until the mixture forms a sticky, uniform batter.
  2. Shape the macaroons: Scoop about 1 tablespoon of the coconut mixture and form it into a small pyramid shape using your hands. Place each pyramid on the prepared baking sheet, spacing them about 1 inch apart.
  3. Bake the macaroons: Bake for 15-18 minutes, or until the macaroons turn golden brown around the edges.
  4. Cool the macaroons: Remove the macaroons from the oven and allow them to cool on the baking sheet for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  5. Add chocolate drizzle (optional): Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until fully melted. Drizzle over the macaroons or dip the bottoms for an extra treat.

Notes

  • Chocolate-dipped macaroons: Dip the bottom of each macaroon in melted chocolate for extra indulgence.
  • Lemon zest: Add lemon zest for a fresh twist.
  • Coconut flour: Use coconut flour for a firmer texture.
  • Storage: Store in an airtight container at room temperature for up to 5 days or refrigerate for up to a week.
  • Freezing: Freeze individually on a baking sheet, then transfer to a container for up to 3 months. Thaw at room temperature.
