Description
This classic Cherry Cheesecake recipe features a rich and creamy cream cheese filling atop a buttery graham cracker crust, topped with luscious cherry pie filling. Perfectly baked to a smooth texture with a slightly jiggly center, this dessert requires a few hours of chilling to set and develop its flavors, making it an ideal treat for gatherings or special occasions.
Ingredients
Crust
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
Filling
- 2 (8 oz) packages cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Topping
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat & Prep: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan or pie dish thoroughly to prevent sticking.
- Make the Crust: In a medium bowl, combine the graham cracker crumbs, ¼ cup sugar, and melted butter. Mix until the crumbs are fully coated and the mixture holds together when pressed. Press this mixture firmly into the bottom of the prepared pan to form an even crust. Bake the crust for 10 minutes, then remove from oven and allow it to cool.
- Make the Filling: In a large bowl, beat the softened cream cheese with ¾ cup sugar until smooth and creamy. Add eggs one at a time, beating well after each addition to ensure the mixture is fully incorporated. Stir in 1 teaspoon of vanilla extract until combined.
- Bake the Cheesecake: Pour the cream cheese filling over the cooled crust, spreading evenly. Bake in the preheated oven for 35-40 minutes, or until the center is slightly set but still jiggles gently when the pan is shaken.
- Cool & Chill: Remove the cheesecake from the oven and allow it to cool on the countertop for about 1 hour. Then, cover and refrigerate for at least 4 hours, preferably overnight, to set completely.
- Add Cherry Topping & Serve: Before serving, spread the cherry pie filling evenly over the top of the chilled cheesecake. Slice into 10 servings and enjoy this delicious dessert.
Notes
- Use room temperature cream cheese for smooth, lump-free filling.
- Be careful not to overbake the cheesecake; the center should still jiggle slightly when done.
- For best flavor, chill cheesecake overnight before adding the topping.
- You can substitute cherry pie filling with fresh cherries cooked down with sugar if preferred.
- Ensure the crust is cooled before adding the filling to prevent a soggy base.
