Ingredients
Filling
- 4 ounces cream cheese, softened
- ⅛ cup sugar
- 1 teaspoon vanilla extract
- ½ can cherry pie filling (approximately 7 ounces)
Wrapper & Cooking
- 6 egg roll wrappers
- Cooking spray or oil for brushing
- Powdered sugar for dusting (optional)
Instructions
- Prepare the filling: In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy, ensuring there are no lumps.
- Set up wrapper for filling: Lay one egg roll wrapper on a flat surface in a diamond shape. Keep a small bowl of water nearby to seal the edges later.
- Add filling to wrapper: Spoon 2 tablespoons of the cream cheese mixture towards the top corner of the egg roll wrapper, then add 1 tablespoon of cherry pie filling on top.
- Roll and seal the egg roll: Fold the top corner down over the filling, then fold the left and right sides inward. Dab a little water along the bottom edge to help seal, then roll up tightly to enclose the filling completely.
- Repeat filling and rolling: Continue this process with remaining wrappers and filling until you have enough egg rolls to fill your air fryer basket, usually about 6.
- Preheat air fryer and prepare egg rolls: Preheat your air fryer to 400°F (200°C) for 3 minutes. Lightly spray or brush each egg roll with oil to help them crisp up during cooking.
- Air fry the egg rolls: Place the egg rolls in the air fryer basket in a single layer, ensuring they don’t touch. Air fry at 400°F for 7 to 8 minutes, flipping the egg rolls halfway through cooking for even crispness.
- Serve: Remove the egg rolls and let them cool slightly. Dust with powdered sugar if desired before serving. Enjoy warm for the best flavor and texture.
