Ingredients
1 lb ground beef
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 medium potatoes, peeled and diced
1 cup milk
1½ cups shredded cheddar cheese
½ cup sour cream
4 slices cooked bacon, crumbled
2 tablespoons flour
Salt and pepper, to taste
Optional toppings: Extra shredded cheese, diced pickles, chives
Instructions
-
In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat and set aside.
-
In the same pot, sauté diced onion for 5 minutes until softened. Add minced garlic and cook for 1 more minute.
-
Sprinkle flour over the onions and stir well. Cook for 1–2 minutes to remove the raw flour taste.
-
Slowly stir in chicken broth, whisking to prevent lumps. Bring to a simmer.
-
Add diced potatoes, cover, and cook for 10–15 minutes until potatoes are fork-tender.
-
Stir in milk, shredded cheddar, and sour cream. Cook until cheese is melted and soup is creamy.
-
Return the cooked ground beef to the pot, stir to combine, and season with salt and pepper.
-
Ladle into bowls and top with crumbled bacon, extra cheese, and other desired toppings.
Notes
-
Make it spicier: Add jalapeños, hot sauce, or cayenne pepper.
-
Vegetarian option: Replace beef with plant-based ground meat or extra veggies.
-
Dairy-free: Use dairy-free milk, cheese, and sour cream alternatives.
-
Thicker soup: Mash some of the potatoes or stir in a cornstarch slurry if desired.
