Ingredients
1 lb ground beef
1 medium onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
3 medium potatoes, peeled and diced
4 cups beef broth
2 cups shredded cheddar cheese
1 cup heavy cream or milk
2 tablespoons tomato paste or 1 can (14.5 oz) diced tomatoes
1 tablespoon Worcestershire sauce
Salt and pepper to taste
2 tablespoons olive oil or butter
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add ground beef and cook until browned. Remove excess fat if necessary.
 - Add chopped onion, garlic, carrots, and celery to the pot. Sauté until vegetables are softened.
 - Stir in diced potatoes, beef broth, tomato paste or diced tomatoes, and Worcestershire sauce. Bring to a boil, then reduce heat and simmer until potatoes are tender.
 - Lower the heat and gradually stir in shredded cheddar cheese until melted and smooth.
 - Stir in heavy cream or milk and season with salt and pepper to taste.
 - Heat gently until the soup is warmed through but not boiling.
