Spiced Maple Syrup
- 1/2 cup maple syrup
- 3 tablespoons salted butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom

- 1/4 teaspoon freshly grated nutmeg
- 1/8 teaspoon ground black pepper
- 1 teaspoon vanilla extract

Galette
- 1 sheet frozen puff pastry, thawed
- 1/2 cup whole milk ricotta cheese
- 4-5 Honeycrisp apples, halved, cored, and thinly sliced
- Coarse sugar, for sprinkling
- Vanilla ice cream, for serving
Instructions
- Preheat the oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) to prepare for baking the galette.
- Make the spiced maple syrup: In a small saucepan over high heat, combine the maple syrup, salted butter, ground cinnamon, ground ginger, ground cardamom, all-spice, freshly grated nutmeg, and ground black pepper. Bring the mixture to a boil, then reduce to a simmer for 2 minutes to allow the flavors to meld. Remove from heat and stir in the vanilla extract and a pinch of flaky sea salt.
- Prepare the puff pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a rectangle about 1/4 inch thick. Transfer the puff pastry to a parchment-lined baking sheet. Spread the ricotta cheese evenly over the pastry, leaving a 1-inch border around the edges.
- Assemble the galette: Drizzle approximately 2 tablespoons of the prepared spiced maple syrup over the ricotta layer. Arrange the thinly sliced Honeycrisp apples over the ricotta, skin side up. Next, brush or drizzle another 2 to 3 tablespoons of the spiced maple syrup over the apples. Carefully fold the edges of the pastry up and over the apples, creating a rustic crust edge. Brush the exposed pastry edges with some of the spiced maple syrup and sprinkle coarse sugar over the top for added texture and sweetness.
- Bake the galette: Place the assembled galette in the preheated oven and bake for 25 to 35 minutes until the pastry is golden brown and crisp. The edges may get dark, which is expected and adds to the rustic look.
- Serve: Once baked, allow the galette to cool slightly. Serve warm with additional chai spiced maple syrup drizzled over and a scoop of vanilla ice cream on the side for a wonderful contrast.
