Description

Ingredients

1 lb boneless, skinless chicken breasts or thighs, diced

1 tablespoon vegetable oil

1/2 cup roasted, unsalted cashews

1/4 cup soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 teaspoon crushed red pepper flakes (optional)

1 head butter lettuce, iceberg lettuce, or romaine

1/4 cup green onions, sliced

1/4 cup shredded carrots (optional)

Sesame seeds for garnish (optional)


Instructions

  1. Make the sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, honey, garlic, ginger, and crushed red pepper flakes. Set aside.

  2. Cook the chicken: Heat vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook, stirring occasionally, for 5–7 minutes until browned and cooked through.

  3. Add sauce and cashews: Pour the sauce over the chicken, stir to coat, then add the cashews. Cook for another 1–2 minutes.

  4. Prepare the lettuce: Separate and wash the lettuce leaves. Pat dry thoroughly.

  5. Assemble wraps: Spoon the cashew chicken mixture into lettuce leaves. Top with green onions, shredded carrots, and sesame seeds if desired.

  6. Serve: Serve immediately and enjoy.
