Ingredients

For the Honey Cream:
- 180 grams (6.3 oz) mascarpone cheese
- 2 tablespoons honey

- Prepare the Carrots and Nuts: Peel the carrots and grate them finely. Roughly chop the cashew nuts or walnuts to the desired size.
- Mix Dry Ingredients: In a separate bowl, combine wheat flour, corn starch, ground cinnamon, baking powder, and salt. Set this mixture aside.
- Combine Wet Ingredients: In a large bowl, use a food processor or mixer to beat the egg and sugar together until well blended. Add the room temperature butter and vanilla extract, then continue mixing for 2-3 minutes until the mixture is smooth.
- Incorporate Carrots and Nuts: Switch to using dough hooks on your mixer. Add the grated carrots and chopped nuts to the wet mixture and blend well. Slowly add the dry flour mixture and continue mixing until the dough is evenly combined.
