Description
Casarecce pasta is a short, twisted Sicilian pasta known for its ability to hold sauces thanks to its unique curl. It’s a versatile and rustic pasta perfect for pairing with a wide range of sauces, from rich meat ragùs to fresh vegetable medleys.
Ingredients
1 pound casarecce pasta
4 cups of water (for boiling pasta)
Salt (for seasoning the water)
Sauce of your choice (tomato sauce, pesto, or creamy mushroom sauce)
Instructions
- Bring 4 cups of water to a boil in a large pot. Add a generous pinch of salt to the water.
- Once boiling, add the casarecce pasta and cook according to the package instructions, usually 9-11 minutes, or until al dente. Stir occasionally to prevent sticking.
- Drain the pasta, reserving a small cup of pasta water.
- Toss the pasta with your desired sauce, adding pasta water as needed to reach the right consistency.
- Serve immediately, garnished with fresh herbs, cheese, or desired toppings.
Notes
- Use gluten-free casarecce for a gluten-free option.
- Try with pesto, bolognese, creamy sauces, or roasted vegetable mixes.
- Add red pepper flakes or chili oil for a spicy variation.
- Leftovers store well in the fridge for up to 3 days.
- To prevent sticking, stir during cooking and toss with olive oil if storing without sauce.
