Description

Casarecce pasta is a short, twisted Sicilian pasta known for its ability to hold sauces thanks to its unique curl. It’s a versatile and rustic pasta perfect for pairing with a wide range of sauces, from rich meat ragùs to fresh vegetable medleys.


Ingredients

1 pound casarecce pasta
4 cups of water (for boiling pasta)
Salt (for seasoning the water)
Sauce of your choice (tomato sauce, pesto, or creamy mushroom sauce)


Instructions

  1. Bring 4 cups of water to a boil in a large pot. Add a generous pinch of salt to the water.
  2. Once boiling, add the casarecce pasta and cook according to the package instructions, usually 9-11 minutes, or until al dente. Stir occasionally to prevent sticking.
  3. Drain the pasta, reserving a small cup of pasta water.
  4. Toss the pasta with your desired sauce, adding pasta water as needed to reach the right consistency.
  5. Serve immediately, garnished with fresh herbs, cheese, or desired toppings.
