Ingredients
For the Cake:
- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- 3 large eggs
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 2 ½ cups shredded carrots
- ¾ cup chopped walnuts or pecans (optional)
- ½ cup raisins (optional)
For the Cream Cheese Icing:
- 8 oz cream cheese (softened)
- ½ cup unsalted butter (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice (optional, for extra tang)
Instructions
Make the Cake:
- Preheat & Prepare Pans – Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a 9×13-inch pan.
- Mix Dry Ingredients – In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients – In another bowl, beat eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract until smooth.
- Add Carrots & Nuts – Fold in shredded carrots, walnuts, and raisins if using.
- Combine & Bake – Gradually mix dry ingredients into the wet ingredients until just combined. Pour batter into prepared pans.
- Bake – Bake for 30-35 minutes (round pans) or 40-45 minutes (9×13-inch pan), until a toothpick inserted comes out clean.
- Cool the Cake – Let it cool completely before frosting.
Make the Cream Cheese Icing:
- Beat Cream Cheese & Butter – In a large bowl, beat softened cream cheese and butter until creamy.
- Add Sugar & Vanilla – Gradually mix in powdered sugar and vanilla extract until smooth. Add lemon juice if using.
- Frost the Cake – Spread icing over the cake. If making a layer cake, frost between layers and on top.
Notes
- Use freshly shredded carrots for the best texture and moisture.
- For extra moisture, add ½ cup crushed pineapple (drained) to the batter.
- To prevent nuts and raisins from sinking, toss them in a little flour before adding to the batter
