  • 1/2 cup granulated sugar
  • 3 large apples (Pink Lady or Honeycrisp), peeled, quartered and cored
  • 1 tablespoon vanilla extract
  • 1 sheet puff pastry (thawed, rolled wider to cover apples)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tart.
  2. Prepare Apples: Peel the apples and cut them into quarters if large, or thirds if medium. Core each piece removing any seeds.
  3. Melt Butter and Sugar: Place the butter and sugar in a cast iron skillet over medium heat. Stir occasionally as the butter melts and combines with the sugar to form a syrup.
  4. Cook Apples: Arrange the apple slices in the skillet over the melted butter and sugar. Cook them until a caramel forms at the bottom, approximately 10 minutes. The apples should start to soften and caramelize.
  5. Add Vanilla: Remove the skillet from heat and drizzle the vanilla extract evenly over the caramelized apples.
  6. Prepare Puff Pastry: Roll out the thawed puff pastry sheet to be wider so it can fully cover the apples in the skillet.
  7. Cover Apples: Carefully place the puff pastry over the apples by rolling it over a rolling pin and unrolling it onto the skillet. Tuck the edges of the pastry underneath the apples to seal the tart.
  8. Bake Tart: Place the cast iron skillet in the preheated oven. Bake for about 15 minutes or until the puff pastry puffs up and turns golden brown.
  9. Cool and Flip: Remove the tart from the oven and let it rest for 5 minutes. Then carefully invert the skillet onto a large plate to flip the tart out, with the caramelized apples now on top.
  10. Finish Presentation: If any apple slices fall out during flipping, arrange them back into place on top for an attractive presentation.

  • Use firm apples such as Pink Lady or Honeycrisp to hold shape during caramelization.
  • Thaw puff pastry completely before rolling to avoid cracking.
  • Carefully handle the hot cast iron skillet when flipping the tart to avoid burns.
  • Letting the tart rest before flipping helps the caramel set slightly and reduces dripping.
  • The vanilla extract adds depth to the caramel flavor but can be omitted if unavailable.
