Ingredients

Crust

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tablespoons white sugar

Filling

  • 3 (8 oz) packages cream cheese, softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 (8 oz) container sour cream
  • ⅓ cup brewed espresso or strong coffee
  • 1 tablespoon vanilla extract

Topping

  • Fresh whipped cream
  • Salted caramel drizzle (or store-bought caramel)


Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and white sugar. Mix until the crumbs are evenly coated with butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add white sugar and brown sugar, continuing to beat until well combined. Add eggs one at a time, mixing thoroughly after each addition. Blend in sour cream, brewed espresso or strong coffee, and vanilla extract until the mixture is smooth and homogeneous.
  3. Assemble and bake: Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula. Preheat your oven to 325°F (163°C). Place the springform pan on the middle rack and bake for 55-65 minutes, or until the center is set but slightly jiggly.
  4. Cool the cheesecake: Remove the cheesecake from the oven and allow it to cool to room temperature in the pan. Then cover and refrigerate for at least 4 hours or overnight to let it set completely.
