Instructions
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a small bowl, make the topping by combining oats, flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Set aside.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs with brown sugar, granulated sugar, oil, milk, and vanilla until well combined.
- Add wet ingredients to dry and mix gently until just combined. Do not overmix.
- Fold in diced apples and caramel bits.
- Divide batter evenly among muffin cups and top with the crisp mixture.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool slightly, then drizzle with caramel sauce if desired.
