Description

Ingredients

Instructions

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.

  1. In a small bowl, make the topping by combining oats, flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Set aside.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs with brown sugar, granulated sugar, oil, milk, and vanilla until well combined.
  4. Add wet ingredients to dry and mix gently until just combined. Do not overmix.
  5. Fold in diced apples and caramel bits.
  6. Divide batter evenly among muffin cups and top with the crisp mixture.
  7. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool slightly, then drizzle with caramel sauce if desired.
