Description

Ingredients

  1. 1 3/4 cups all-purpose flour
  2. 2 tsp baking powder
  3. 2 tbsp sugar
  4. 1/4 tsp salt
  5. 1 3/4 cups plant-based milk (almond, soy, oat, etc.)
  6. 1 tbsp apple cider vinegar or lemon juice
  7. 1/4 cup vegetable oil or melted vegan butter
  8. 1 tsp vanilla extract
  9. 2 ripe bananas, sliced
  10. 1/2 cup vegan caramel sauce (store-bought or homemade)
  11. Optional: chopped nuts, vegan whipped cream, chocolate shavings

Instructions

In a small bowl, mix the plant-based milk and apple cider vinegar. Set aside for 5 minutes to curdle.

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. Add the curdled milk mixture, oil, and vanilla extract to the dry ingredients. Stir until smooth.
  3. Preheat your waffle iron according to the manufacturer’s instructions.
  4. Pour batter into the waffle iron and cook until golden and crisp (usually 4–5 minutes).
  5. While waffles cook, warm the caramel sauce and slice the bananas.
  6. Serve the waffles topped with banana slices and a drizzle of warm caramel sauce.
  7. Add optional toppings if desired, and enjoy immediately.

Notes

  1. Add chocolate chips to the batter for a chocolate banana version.
  2. Sprinkle cinnamon or nutmeg into the batter for a spiced variation.
