Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon dried oregano (optional)
1 cup fresh mozzarella, sliced
1 ½ cups cherry or grape tomatoes, halved
¼ cup fresh basil, chopped
2 tablespoons balsamic glaze
1 tablespoon balsamic vinegar (optional, for extra tang)

Preheat Grill/Skillet: Preheat your grill or skillet over medium-high heat. Lightly coat the chicken breasts with olive oil and season with salt, pepper, and oregano (if using).

Cook the Chicken: Cook the chicken on the grill or in the skillet for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).

Prepare the Caprese Topping: While the chicken is cooking, prepare the tomato and basil topping. In a mixing bowl, combine the halved cherry tomatoes, fresh basil, and a pinch of salt and pepper. Toss well and set aside.
