Description

Caprese Chicken is a simple, flavorful, and satisfying dish that combines the best of Italian cuisine: fresh tomatoes, basil, mozzarella, and a balsamic glaze—perfectly paired with juicy chicken breasts. This dish is not only a treat for the taste buds but also a great option for a healthy, quick weeknight meal or a weekend dinner that’s both elegant and easy to prepare.


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon dried oregano (optional)

1 cup fresh mozzarella, sliced

1 ½ cups cherry or grape tomatoes, halved

¼ cup fresh basil, chopped

2 tablespoons balsamic glaze

1 tablespoon balsamic vinegar (optional, for extra tang)


Instructions

  • Preheat Grill/Skillet: Preheat your grill or skillet over medium-high heat. Lightly coat the chicken breasts with olive oil and season with salt, pepper, and oregano (if using).

  • Cook the Chicken: Cook the chicken on the grill or in the skillet for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).

  • Prepare the Caprese Topping: While the chicken is cooking, prepare the tomato and basil topping. In a mixing bowl, combine the halved cherry tomatoes, fresh basil, and a pinch of salt and pepper. Toss well and set aside.

  • Top with Mozzarella: Once the chicken is cooked through, top each breast with slices of fresh mozzarella.

  • Melt the Cheese: Reduce the heat to low, cover the skillet (or if grilling, move the chicken to indirect heat), and let the chicken sit for 2-3 minutes until the cheese is melted and bubbly.

  • Assemble & Serve: Remove the chicken from the heat and spoon the tomato and basil mixture on top of each breast. Drizzle with balsamic glaze and, if desired, a little balsamic vinegar for extra tang. Serve immediately, garnished with more fresh basil if desired.
