Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips (for dough)
- 1 1/2 cups whole milk ricotta cheese, well drained
- 3/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon (optional)
- 1 tsp orange zest (optional)
- 1/4 cup mini chocolate chips (for filling)
Instructions
Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- Make the dough: In one bowl, whisk flour, baking soda, and salt. In another bowl, cream butter with granulated and brown sugar until light. Beat in egg and vanilla. Gradually mix in dry ingredients. Fold in mini chocolate chips.
- Form cups: Scoop dough into muffin tin wells. Press with thumb or spoon to shape into cups.
- Bake: Bake for 10–12 minutes until golden. Immediately press centers down to reinforce cup shape. Cool completely before removing.
- Make filling: Beat drained ricotta with powdered sugar, vanilla, cinnamon, and orange zest until smooth. Fold in mini chocolate chips.
- Assemble: Pipe or spoon filling into cooled cookie cups. Garnish with extra chips or powdered sugar.
- Optional: Chill filled cups for 30 minutes before serving for best texture.
