Description

Ingredients

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 1/2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set it aside.
  3. In the same skillet, add the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened.
  4. Stir in the rice and cook for 1-2 minutes, allowing it to lightly toast.
  5. Add the chicken broth, diced tomatoes with juice, Cajun seasoning, paprika, thyme, and black pepper. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 15 minutes.
  7. Check the rice after 15 minutes and add more liquid if needed. Continue cooking until the rice is tender and the liquid is absorbed.
  8. Once the rice is cooked, return the sausage to the skillet and stir to combine. Cook for 2-3 minutes until heated through.
  9. Adjust seasoning with salt and additional Cajun seasoning to taste.

Notes:

  • For added spice, incorporate more Cajun seasoning or hot sauce.
  • If using brown rice, adjust the cooking time and liquid accordingly.
  • Store leftovers in an airtight container for up to 3-4 days. Reheat with a splash of broth.
