This Cajun Sausage and Rice Skillet is a flavorful one-pan meal that combines smoky sausage, Cajun spices, and tender rice. Ingredients
- 1 lb smoked sausage, sliced
- 1 cup long-grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 2 1/2 cups chicken broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon thyme
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set it aside.
- In the same skillet, add the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened.
- Stir in the rice and cook for 1-2 minutes, allowing it to lightly toast.
- Add the chicken broth, diced tomatoes with juice, Cajun seasoning, paprika, thyme, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 15 minutes.
- Check the rice after 15 minutes and add more liquid if needed. Continue cooking until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, return the sausage to the skillet and stir to combine. Cook for 2-3 minutes until heated through.
- Adjust seasoning with salt and additional Cajun seasoning to taste.
Notes:
- For added spice, incorporate more Cajun seasoning or hot sauce.
- If using brown rice, adjust the cooking time and liquid accordingly.
- Store leftovers in an airtight container for up to 3-4 days. Reheat with a splash of broth.
