Ingredients

1 lb (450g) boneless, skinless chicken breasts or thighs, cut into strips

2 tablespoons Cajun seasoning (store-bought or homemade)

1 tablespoon olive oil

1 onion, chopped

1 bell pepper, chopped

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1 tablespoon tomato paste (optional, for extra flavor)

8 oz penne or fettuccine pasta

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Salt and pepper, to taste


Instructions

  1. Cook the Pasta: Begin by cooking the pasta according to the package instructions. Drain and set aside.

  2. Season the Chicken: While the pasta cooks, toss the chicken strips in Cajun seasoning, making sure they are well-coated.

  3. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  4. Sauté the Veggies: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté for about 3-4 minutes, or until the vegetables are tender.

  5. Make the Sauce: Add the chicken broth and tomato paste (if using) to the skillet. Stir well and bring to a simmer. Add the heavy cream and cook for another 2-3 minutes, allowing the sauce to thicken slightly.
