Description

Cadbury Mini Egg Chocolate Chip Cookies are soft and chewy cookies loaded with chocolate chips and colorful Cadbury Mini Eggs—perfect for spring, Easter, or anytime you’re craving a fun and festive treat.


Ingredients

  1. 2 1/4 cups all-purpose flour
  2. 1 tsp baking soda
  3. 1/2 tsp salt
  4. 1 cup unsalted butter, softened
  5. 3/4 cup granulated sugar
  6. 3/4 cup brown sugar, packed
  7. 2 large eggs
  8. 2 tsp vanilla extract
  9. 1 cup semi-sweet chocolate chips
  10. 1 1/2 cups Cadbury Mini Eggs, roughly chopped

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  1. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips and chopped Cadbury Mini Eggs.
  6. Scoop dough using a cookie scoop or spoon and place on the prepared baking sheet, spacing cookies about 2 inches apart.
  7. Press a few extra mini egg pieces on top of each dough ball for a decorative finish.
  8. Bake for 10–12 minutes or until the edges are golden and the centers are just set.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  1. Chill the dough for 30 minutes to reduce spreading if desired.
  2. Add a slice of bread to the storage container to keep cookies soft.
  3. Swap chocolate chips with dark or milk chocolate as preferred.
  4. Mini eggs are easiest to chop by crushing gently in a sealed bag.
